Chocolate Covered Caramel Crunch Stars

Once you have gotten the hang of melting and molding chocolate, this is a simple candy that takes just a few more minutes but multiplies the flavor five fold. Take some of our caramel loaf and gently warm it in a double boiler or indirect heat. You just want to get it soft; if it starts to bubble it will be rock hard when you finish. Once the caramel is soft, take it off the heat and mix in some puffed rice. The amount is up to you, more goes farther, but less concentrates flavor. Once the rice is coated in the caramel, grab some bits out and press it into a simple shape or mold, my favorite is an eight pointed star. Stick this into the fridge for a few minutes to make the caramel ridged. Take your stars back out and dip them into your melted chocolate after you have added your seed chocolate and it has cooled to 85 degrees. Place these on some wax paper and pop them back into the fridge for 15 to 20 minutes. If everything went right, you should have a chewy, crispy treat that is the definition of decadence.
